The Azienda Agricola F.lli Degani, whose name suggests how their activity is lived. A family management, in the truest sense of the word, where all the activities, from the first manual harvesting of the grapes, their drying for the glory of Amarone and Recioto, the vinification and, finally, bottling, are followed by family members and implemented according to traditional methods.
Their work was rewarded: in 1996 the wines made their way in prestigious guides such as “Il Gambero Rosso” and not just that: Veronelli, AIS, Luca Maroni and then across the Alps with the Swiss “Merum” and the German “Der Feinschmecher” as well as in newspapers such as La Repubblica and Il Corriere della Sera.

VALPOLICELLA RIPASSO DOC
The grapes are softly crushed while removing the stalks. The fermentation temperature ranges from 22° to 28° C. Then the must is left for 12 days to macerate, acting a manual press at regular intervals (20 minutes, 3 times daily). The wine is then stored in stainless steel tanks till February when it is poured over the lees of the Amarone grapes for 15 days at a temperature of 15° C (this technique is called Ripasso). After this procedure the wine is transferred in barrels for 24 months.
AMARONE DELLA VALPOLICELLA DOC LA ROSTA
Amarone is a noble wine produced with the best bunches hand picked and then laid fat in special wooden boxes for a 3/4-month drying process. Thanks to this method, the grapes increase their sugar concentration by 25-30%. In January the grapes are crushed and then the fermentation starts. After 25-30 days the must is transferred into stainless steel tanks. Once the malolactic fermentation is completed, the wine matures in barriques (special barrels) for 24-36 months and then refned in bottles for some months. This wine is the result of top-quality grapes and can be produced only in the best vintages. Food Recommended with red meat, game, grilled-meat, braised meat and seasoned cheese as well as at the end of a meal, as meditation wine.

Conservation: If stored at uniform temperature of 14-15° C, laid and away from light sources, the wine maintains its characteristics unaltered for 15-18 years.
Organoleptic assessment: Intense garnet red in colour, this wine is rich, full bodied and frm. Its perfume is clear and fresh, its taste is velvety and lingering. Well structured and beautifully balanced with soft tannins and a hint of chocolate and vanilla.
Serving method: If stored at uniform temperature of 14-15° C, laid and away from light sources, the wine maintains its characteristics unaltered for 15-18 years.
